Super Snacks for the Super Bowl: Buffalo Chicken Dip

A few months ago, at a birthday party my daughter attended, I found myself standing around in the host's kitchen making small talk with other mothers.  Not exactly an unusual place to find myself these days :-)

Anyway, this party had quite a spread appetizer-wise, and I was trying my best to ignore everything everyone was eating because- ugh- I'm still on a diet.  It's pretty much become a way of life at this point, so I'm fine adapting recipes and making things low-carb when I cook for my family.  Unfortunately, parties are often not places with tons of low-carb dishes to nosh on and I'm generally limited to the vegetable tray.

At this particular party there was a tray of nondescript dip that I hadn't paid much attention to- until one of the other mom's started raving about it.  I had to ask what it was...

Cream cheese, chicken, hot sauce, cheese...

Oh my.

All low carb, AND there was a tray of celery I could dip with in order to forgo the tortilla chips that had been set out.

Three servings of this magical dip later, I was hooked and knew I needed to make it for myself!

Yes, it's a funny shade of orange.  That's ok.  It's super tasty, so I don't care what it looks like!

This is definitely one dip that will be making an appearance on my table for the Super Bowl this year- and it doesn't hurt that celery is the perfect low-carb accompaniment to buffalo chicken :-)

Buffalo Chicken Dip

3 boneless chicken breasts, cooked and shredded
2 (8 oz) packages cream cheese
1 C blue cheese dressing (or ranch)
3/4 C Frank's Red Hot® sauce
1 1/2 C pepper jack cheese (or cheddar), shredded
1 bunch celery (or chips or crackers) for serving

1. Preheat oven to 350.  Mix all ingredients (except celery) thoroughly.  Transfer to an 8"x11" pan.  Bake for 20-25 minutes until heated through and cheese is melted.

  1. Pulse the cooked chicken in a food processor a few times for quick and easy shredding...also mixing all ingredients in a stand mixer makes this recipe a snap!

    1. Ooh! Another neat trick? You can also shred chicken in the stand mixer in seconds. Just shred the chicken first with the paddle attachment then add in the other ingredients :-)

  2. I just found this and made out tonight and OH MY GOODNESS, it's my new favorite food. Love that it's low carb with celery to dip in it and that tastes even BETTER than using chips. :)
