Super Snacks for the Super Bowl: Spicy Tortilla Rollups

Goodness what a crazy holiday season it's been!
Family coming, family going, lots of travels...and then there were the many, many popcorn orders to fill.

I've been an exceedingly busy girl.  

While I haven't had the chance to post anything in about a month, I've been snapping pictures of good food every chance I got in anticipation of a time when I would have a few moments to sit down and get them posted for you!

Today is just that day.  Chilly gray weather, good music, coffee, one child doing homework and the other taking a nap on the couch next to me.  All by the peaceful light of the tree that I stripped of ornaments earlier today and will be returning to its box tomorrow where it will patiently wait for it's time to shine again later this year.

We had a New Year's Eve full of family, board games, and food this year and it was absolutely wonderful- if not slightly anticlimactic as the only ones who were full of energy at midnight were the kids, we forgot to turn on the TV before the ball dropped, and the prosecco was already flowing.  :-)

It was decided that we would go with a Mexican theme for snacks.  We had the obligatory salsa and guac but we also munched on mini tacos, tamale cornbread bites, queso, two kinds of tamales, sopapilla cheesecake, and these tortilla rollups.

While I have some delicious recipes to share from our evening, today we're here for the rollups.  They were the sleeper hit for sure!
Who would have expected them to be a favorite among that lineup?  Certainly not me.

So I came across this recipe for Mexican-ish tortilla rollups and- being a sucker for carbs, cream cheese, and spiciness- decided they would be perfect for our Mexican spread.

The only problem was they were terrible.
I made the recipe as written, tasted it, and blech- so bad.
I was definitely not going to waste all of those ingredients though, so I played around with it till it worked.

Thankfully it worked really, REALLY well.
People (me included) couldn't keep their hands off of them.
Sooooooo good!

I'll definitely be making these again- and with playoffs upon us and Super Bowl 50 a month out it's definitely worth keeping these on your radar for game day snacking!


12 oz cream cheese, softened
1 C sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 1/2 C chunky salsa
2 C shredded Cheddar cheese
1/4 C chopped green onion
1/4 C diced pickled jalapeño
1 Tbsp chili powder
1 tsp cumin
10 (10 inch) flour tortillas

1. In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa, cheddar cheese, green onion, pickled jalapeño, chili powder, and cumin.  Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve, at least 1 hour.

2. To serve, slice the chilled, rolled tortillas into 1" slices and arrange on a large serving platter.
