Super Snacks for the Super Bowl: Low Carb Party Bites

One of the most frustrating things about a low-carb diet is the lack of snack foods.

In a world of chips, dips, crackers, candies, sauces, wraps, cakes...there you sit with the broccoli.
Or peanuts.
Or cheese slices.

 Sometimes a girl just wants something fun to snack on while she watches the NFL playoffs.  Oh boy did I never think I'd ever in a million years type that sentence...

Anyway, so I've been on the lookout for low carb snacks.  In my mind, a good low carb snack- or any low carb food, really- needs to be a couple of things.  

1) It has to actually be yummy enough that people who AREN'T low-carbing will want to eat it too
2) It shouldn't call for any weird low-carb ingredients that I don't normally buy

So anyway, I was plotting my snack plan for the Seahawks game last weekend, despairing at the fact that I couldn't just make a batch of Spicy Tortilla Rollups.  I stumbled across a recipe for something so simple it could hardly be considered a recipe that also looked tasty and very snackable.

Salami, cream cheese, and pepperoncinis.
That's it.  It really couldn't get any easier!

Just smear a little cream cheese on a thin piece of salami, top with some pepperoncini slices, fold it closed and secure with a toothpick.

Supremely snackable.
You could definitely play with this a little...maybe a different deli meat, a flavored cream cheese, or some roasted red peppers or pickled okra or something.  Whatever.  Between these and a plate full of chicken wings with my latest low-carb sauce creation (recipe coming soon!) I was a happy girl as I watched my Seahawks win!


1 (8 ounce) package cream cheese, softened
18 slices thinly sliced salami
18 slices pepperoncini peppers, drained, or to taste

1. Spread about 1 1/2 teaspoon softened cream cheese over a slice of salami; top with 1 to 3 slices of pepperoncini pepper. Roll the salami around the cheese and pepper; secure with toothpick. Repeat with remaining ingredients; serve immediately.

  1. One word. YUM! I'm not low carb dieting, but these would be so good on game day no matter what your diet preference is!
