Corned Beef Cheeseballs- Made Mini of Course!

So, we've discussed my love of mini foods ad nauseam, right?

Well...here we go again.


This is one mini food that is super awesome, though!

A couple of years ago I came across this recipe from Taste of Home (back when it was affiliated with Allrecipes.com) for Individual Cheese Balls.

Why are mini cheese balls so brilliant?  Well, cheese balls are yummy...but we generally don't eat them unless there's some kind of gathering.  I don't generally find myself sitting in front of the TV with a giant cheese ball and a box of crackers on a regular basis- do you?

These itty bitty cheese balls are game changers!

They're perfectly sized for an individual snack and easy to throw in a lunch box.  They're great for TV snacking or a mid-afternoon bite.  I'm a little enamored!  Best of all?  They freeze well, so you won't get burnt out on cheese ball before you've finished it!

Any cheese ball recipe can be made mini, including this recipe for Corned Beef Cheese Balls from Allrecipes.com.  

Normally I kind of cringe at the thought of corned beef.

It might be just great- but I have this memory of my grandma making it when I was a kid.  She may have made it lots, that may have been the only time, I really can't recall- but I have such a vivid memory of standing in her kitchen quietly begging my mother not to make me eat it because I found it so repulsive.

Granted I felt the same way about brussels sprouts back then, and now they're my favorite veggie, but...yeah.  In general, I have zero desire to give corned beef a second try.

With St. Patrick's Day coming up, I decided to bend my "no corned beef" rule a little- and I'm glad I did because they're soooo good!  Cream cheese, little pieces of corned beef, horseradish, green onion, all rolled in chopped pecans.  My husband, who turned up his nose at the thought of this recipe, polished one off quickly and proceeded to rave about it!

If you're looking for a great appetizer for St. Patrick's Day or just a yummy snack, this recipe is a winner!


8 ounces cream cheese, softened
1/4 lb deli-sliced corned beef, diced
3 green onions, finely chopped
1 tablespoon mustard
2 tsp Worcestershire sauce
1 teaspoon prepared horseradish
1 cup chopped pecans

1. Combine cream cheese, corned beef, green onions, mayonnaise, Worcestershire sauce, and horseradish in a bowl until thoroughly mixed.

2. Allow cheese mixture to chill for 30 minutes.  Shape cream cheese mixture into 10 2-inch balls.
3. Place pecans into a shallow bowl. Roll and coat ball in chopped pecans. Refrigerate until ready to serve.
